Low Carb Keto/Paleo Waffles

Everyone loves a good breakfast – right?! Well, you dont have to miss out on your favorites while embracing your keto or paleo lifestyle.

While my normal weekend breakfast favorite is pancakes (be sure to check out my Almond Flour Keto Pancakes  recipe), but every once in a while a nice fluffy, but crisp on the outside waffle w/ some sausage or bacon, just sounds perfect! For some reason, you can top waffles with something more substantial than a pancake. I guess it’s the crunchy exterior – but it just works.

For this recipe I wanted to experiment with tigernut flour. I just learned about tigernut flour about 6 months ago. Tigernut is actually not a nut at all but a small root vegetable. It has as much iron as a serving of red meat (10% of recommended daily allowance), 15% of your vitamin E and 8% of your daily magnesium! It also has as much potassium as coconut water. All of that makes it a super-food in my book! Bonus – while it has 19 g of total carbs per 1/4 cup its loaded w/ prebiotic fiber (10 g per 1/4 cup). So net carbs are very low (9 g net carbs). Pretty fantastic! I haven’t tried other brands but I really like the Organic Gemini Tigernut Flour. I’m a Thrive Market member and saw it on their site and heard good things about tigernut so I gave it a try.

If you have a low carb recipe with a really dense flour, try cutting half of the flour w/ tigernut. You may need to add slightly more water, so add your liquids slowly to get the right consistency of your batter on your first try. I have cut my Almond Flour Keto Pancakes with tigernut and they definitely make a fluffier pancake over all almond four! Try it! I also think tigernut would be great in a keto 90 second bread (I’m going to work on that recipe!) or other keto baked goods. The possibilities are endless.

I like to top my waffles with either some butter, almond butter and/or a drizzle of the Lakanto Maple Flavored Syrup. Try mixing some coconut cream and your favorite nut butter together – its to die for!
Or, try my latest combo – 2 Tbsp coconut cream w/ 1 tsp maca, 3 drops liquid stevia and a dash of sea salt!

Maca has some great health benefits and can help support your thyroid and hormone balance. Im working on both right now, so Im working on incorporating more maca into my recipes. I really like the ‘butterscotch’ flavor. I think it can take some getting used to, but I’ve really grown to like it.

* BTW – If you pair two of these with a fatty coffee or tea latte, it makes for some near perfect keto macros!

I hope you enjoy this recipe as much as I do. The waffles freeze and reheat really well. I just threw two in my toaster this morning and they tasted like they were fresh! I think these would pack really well for camping or backpacking as well! They should hold together enough to make a sandwich with them (However, I would wait to assemble the sandwich until you are ready to eat). I’ll have to test that as well. If anyone does before me, please let me know how it goes.


  • 1/2 cup almond flour
  • 1/2 cup tigernut flour
  • 4 Tbsp ground flaxseed
  • 1-1/2 tsp baking powder
  • 1/4 tsp sea salt
  • 1 tsp cinnamon
  • 1 pkg of dry or 4 drops liquid stevia (optional)
  • 2 Tbsp melted coconut oil (or butter or ghee)
  • 6 drops liquid stevia (or 1 packet of powder)
  • 3 large eggs
  • 1 cup coconut milk (blend 2 Tbsp coconut cream + balance of water to 1 cup mark for 30 sec)


  1. Pre-heat an electric waffle maker.
  2. While warming waffle maker, mix all dry ingredients in a small bowl and whisk with a fork to combine.
  3. Add all wet ingredients on top of the dry (in the same bowl) and whisk until batter is smooth.
  4. My waffle maker made 2 square waffles at a time. For this size, scoop ~1/4 cup of batter into each square (until just covered) and close the lid until the light indicates the waffle is done. *leave in an extra minute for a crisper waffle.
  5. Set cooked waffles on a cooking rack or in a warm oven to prevent them from getting soggy.
  6. Served topped with butter, a low carb monkfruit syrup, coconut cream, and/or nut butter.

Instant Pot Ribs – Keto & Paleo Friendly

I love fall-apart, well-seasoned ribs just as well as the next carnovorie! But I lack paitience and time for smoking meat. I just buy my smoked meat from BBQ joints who have it down – or visit friends who do a great job smoking their own! But Im always looking for ways to use my Instant pot, and a Pintrest recipe caught my eye from I Breathe I’m Hungry. Im sure the original recipe is great, I actually used the dry rub ratios, but I didnt have time to make my own sauuce. So, I simplified the recipe and these hit the spot! I guess you could say I “cheated” a little by using a bottled sauce, but hey, I have a lot going on :). I found that after reading the labels on every single bottle of BBQ sauce in Whole Foods Market, Annie’s Naturals (Original) had hands down the lowest sugar/carbs of any BBQ sauce on the shelf! Bonus – It was actually good too!

                                 Annie's Organic Gluten Free BBQ Original Recipe Sauce, 12 oz

3 lbs pork ribs individually cut up
1 Tbsp sea salt
1/4 tsp ground black pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp paprika
~1/4 cup Annie's Naturals Original BBQ Sauce (just need enough to brush the top of each rib with sauce before broiling. 
    1. Cut ribs into individual pieces.
    2. Combine the dry rub ingredients in a small bowl and mix thoroughly.
    3. In a large bowl, or using the Instant pot bowl, place the ribs and then sprinkle the dry rub over the ribs. Toss the ribs by hand in the dry rub until each rib is thoroughly coated.
    4. Using the steamer basket of your Instant Pot, place the basket in the bottom and then stack the ribs over each other.
    5. Add 1/2 cup of filtered water to the bottom of the Instant Pot.
    6. Cook on high pressure for 35 minutes.
    7. Pre-heat your oven broiler to 400F when only 5 minutes remain on the Instant Pot timer.
    8. After the Instant Pot beeps and 35 minutes is complete, release the pressure per the manufacturers instructions.
    9. Carefully remove the ribs with tongs and place on a baking sheet.
    10. Brush each rib with a little BBQ sauce.
    11. Place under a broiler approx 5 minutes or until they crisp up on the outside. Becareful not to cook too long and dry them up.
    12. Remove from oven and serve up as desired.
  1. In the photo, I served them up with a small salad and sauteed aspargus and spinach. But, these would also pair great with a little homemade slaw for an easy summer meal!

Keto Crab Cakes

I love seafood and was looking for something I could make into a keto seafood meal aside from another salmon fillet. I happened to be looking thorugh some wild caught seafood options at Trader Joe’s and something caught my eye – this package of wild caught crab meat with only one ingredient – crab meat! Score!

I had been playing around w/ a salmon cake recipe, but hadnt got it just right yet. The canned variety is good, but this frozen crab meat is lump crab and frozen from fresh (not processed at all). I knew I could do more with this! These exceeded my expectations. I hope you enjoy them as much as my family and I did. I secretely wanted to hoard them all for myself.


1 Flax egg - 1 Tbsp ground flax seed + 3 Tbsp water 
(combine and let sit for 3-5 mins prior to adding)
1 large egg
1/4 tsp paprika
1/4 tsp garlic powder 
1/2 tsp sea salt
2 Tbsp finely diced onion
Juice from 1/2 a lemon
2 Tbsp mayo (I like Primal Kitchen's avocado oil mayo)
1 Tbsp mayo for topping cooked crab cakes
5 Tbsp Tigernut flour (I found Organic Gemini brand on Thrive)
  (almond flour would probably work as well, but I have not tried)
2 packages of Trader Joes Wild Caught Crab Meat (there are 2 per package)
2 Tbsp coconut oil or ghee (for frying)
    1. Throw all of the ingredients aside from the crab into a bowl and mix thoroughly.
    2. Add the crab and fold into the wet ingredients. Add more flour if necessary to create a thicker batter. Note that the batter will be loose but will bind as you cook due to the egg.
    3. Add oil of choice (use a high temp oil like those listed above) to a hot non-stick pan and once the oil is hot, drop the batter into 4 equally sized cakes.
    4. Brown approx 4-5 mins on each side. IMG_2617
    5. I served mine atop a couple bib lettuce leaves w/ an extra dollop of mayo on top for taste (and to balance out my macros). IMG_2619


    I also sauteed some kale for my side, squeezed a lemon wedge over everything and it made a fantastic and satisfying meal.

Simple (and Fast) Instant Pot Bone Broth

Im a little obsessed with my electric pressure cooker right now. I use the Instant Pot brand, but I know there are lots of others on the market now. I use it for so many things and bone broth is a big one. I usually make a big batch about once every two weeks and freeze the extra. I use my bone broth to just drink for the benefits Ill list below, but also to make extra nourishing soups. I also make a big batch of brown rice in it (for my non-keto eaters in the house) so I can freeze servings of the rice in flattened freezer bags and then just pull one out for a quick side dish. This makes the rice taste really good and also cooks all of the extra minerals (and protein) into the rice. This is great for sneaking this into your kids meals! Another big thing I use it for is to make my own non-dairy yogurt. The recipe I’ve been using for a while now comes from The Whimsical Wife. Its the first one that I’ve found that makes a nice thick dairy-free yogurt and not some watery mess. I almost always sub cashew nuts instead of almonds though. I like that I don’t have to strain the cashews and this also makes for a thicker and creamier yogurt! I also sub tapioca flour for the corn starch. Then, instead of the crock pot, I now use my instant pot! Works like magic!

But this post is supposed to be about bone broth, not yogurt! 🙂 Im sure by now you have heard about all of the benefits of bone broth, but here are some key benefits:

  • Supports the immune system from the extra vitamins and minerals
  • Promotes healthy digestion by healing and sealing the gut lining
  • Strengthens bones, skin, nails and hair (can you say collagen?!)
  • Provides natural electrolytes

    This is why mom’s homemade chicken noodle soup was always claimed to help cure the common cold! Only back in the day, it was actually made from scratch (and the actual bones) and not from a can! If you want to keep your family healthy this winter, cook with homemade bone broth!In this recipe I use chicken bones that I saved from rotisserie chickens that I purchase most every week. Just save them up in the freezer and when you get about 1/2 – 3/4 a gallon sized bag worth of bones, make a batch. Im going to list a super simple version and then give a list of optional adders that will just enhance your both and make it more rich. These are not necessary to get the health benefits of the broth. The key is that you want your broth to get a little thick or gelatinous after its been refrigerated. That’s how you know you have a lot of collagen in the broth. But, if your batch doesn’t do this, it doesn’t mean your not getting lots of good stuff from it. It just has less collagen. You can adjust next time by adding a few more bones or cooking 15 mins longer.

1/2 - 3/4 of a gallon sized bag of roasted chicken bones
2 cloves garlic (just crush the whole cloves and thrown in the pot)
2 teaspoons dried thyme
2 bay leaves 
1 Tbsp Himalayan sea salt (or grey sea salt for the highest mineral boost)
1 tsp black peppercorns (whole)
1 Tbsp Apple cider vinegar (to pull minerals out of the bones)
Water to the "Max" fill line in the Instant Pot
1 thumb sized piece of ginger (sliced)
and/or approx 2 tsp fresh turmeric root (finely sliced)
1/2 large onion (cut into big chunks)
3 medium carrots (cut into large chunks)
3-4 celery stalks (cut into large chunks)

    1. Throw all of the ingredients under “The Super Simple Version” list above into the Instant Pot.
    2. Add optional ingredients as desired.

      Frozen chicken bones, seasonings, and veggies
    3. Fill the Pot with filtered water to the “Max” fill line marked on the inside of the pot. 
    4. Place the inner pot into the Instant Pot housing and close and lock the lid and ensure the vent is closed.
    5. Push the “Manual” button and set the time to 90 minutes. Note that I have made this in as little as 45 minutes; it just may not be as gelatinous. If you are time crunched, set it for 45 minutes. Its still worth it!
    6. After completion of the cycle, turn the pot off and vent the pressure.
    7. Remove the lid and allow to cool a bit. I usually remove the inner pot and set it on the stove so it cools faster.
    8. Using a funnel and fine mesh strainer, ladle the broth out of the pot and into 4 cup mason jars (or other containers of choice). 
    9. Store in fridge immediately for up to a week, or freeze for 6+ months.

Adventures in International Traveling (while Keto)

Me and the fam just returned from a 1 week trip to Nicaragua! We had some friends who helped advise on where to go and some of the arrangements, but it was a bit of a last minute trip since we booked it only 3 weeks out! Fortunately I had a ton of airline miles to use and that helped, but I have to say, its not cheap to fly from the Midwest to Managua, Nicaragua. Once you get there though, its extremely cheap travel. Actually, we met and saw many backpackers on our travels – mostly European and Canadian.

We were advised to have a driver (by some acquaintances who have family there), and at the minimal extra cost, we decided to get one. However, he didn’t speak a lick of English (which we were not told in advance) and we did a poor job of brushing up on our Spanish before this shortly planned trip, so communication was challenging to say the least. We relied heavily on our dictionary and Google translator app! But even then, we had a really hard time understanding, more than ever before (have traveled to a number of Spanish speaking countries in years past). The only thing we can figure is that he was from an area with a different accent than we are used to. Not sure, but it forced us look up words, practice, and write out what we wanted to say in advance. I have a strong appreciation for language and have always wished I had more of a natural ability to learn language and also that I had started much much younger! By the end of the week, I felt like we had made some progress, immersion works people! This was MAJOR motivation for me and my husband to work on it over the next year and we are going to have competitions on Duolingo to see who can keep up their streak the longest!

So on our trip, we flew into Managua, picked up the rental, groceries and had dinner and then drove all of the way to the Pacific coast (approx 3 hour drive w/ traffic). Traffic was thick and at night it was difficult to navigate the roads if you didnt know where to go, which made is glad we had a driver for that leg of the trip. However, after getting a lay of the land we are sure we could have done it w/ a GPS and if we drove it in the daytime. It was a brutal day after catching a 5:45am flight and we didnt get to the beach house in Playa El Coco until around 7:30pm at night. Our (almost) 4 year old was a trooper though. He handled it all like a champ and we were super impressed with how much easier he is to travel with these days. I had new (cheap) toys lined up for the trip for him to open up as we went through the day as well as lots of cartoons and movies and of course loads of snacks and a sweet treat for him! He was truly amazing! We got to the house after dark, so just settled in for the night and got to bed early, but woke up to a beautiful view of the ocean!

Playa El Coco is really a small beach with mostly private homes and so very quiet and not crowded at all. It was really relaxing. Our house also had a pool, which was super fun for all of us. We mostly ate at the house, but one day went into Playa San Juan del Sur to eat lunch. We had lunch right by the water and it was beautiful and relaxing. San Juan del Sur had a cool beach town vibe and with a bit more hotels and resorts. I say resorts, but mind you we never saw any truly big resorts. Im sure they exist, but they are not very common. We got the feeling that in general this area does not cater to the all inclusive crowd, but more of your independent explorer type – like us. 🙂 My husband ordered lobster, and I wish I had taken a photo b/c for $20 he got FOUR lobster tails on his plate! I had some pork ribs which were barbecued and perfectly fatty (staying keto). I skipped the rice and had a little side of cooked veggies.

Speaking of staying keto. The main way I did this was I traveled with my MCT oil powder, collagen packs and coconut oil. I had a fatty coffee every morning and eggs and sometimes a 1/4 cup of rice and beans (just cause I couldn’t pass up the authentic stuff). I stayed satiated through lunch. I focused my meals around meat and topped any lean meats with coconut oil before eating. I definitely ate a little fruit and a few bites of carbs here and there, but I actually felt really good. No digestive issues and I think I even came home a hair leaner! It was much easier than I expected to stay keto while traveling. I also had lots of good snacks for the travel days including nut butter packs, meat sticks, and some Bulletproof bars (which are actually quite good). If you are traveling, go into it prepared and do your best but dont stress about it. I still felt totally fat adapted when I got home. No adjustment needed.

After a few nights at the beach, we headed to San Jorge to catch a ferry to Ometepe Island. We thought we had communicated that we needed the driver to make a ferry reservation clearly enough (Ill spare you the details) but apparently that was NOT the case. We arrived at the ferry to find out that we had no reservations – not for us or the car. So, what do you do? Bribe the port authorities of course! Money talks in Nicaragua and for only an extra $25 we got on the ferry! We are all excited and get in line and then we sit…and sit…and sit for 3.5 hours b/c high winds end up canceling two ferry runs! So when we finally get on the ferry, there are about 3 boats worth of people crammed on one boat! It was interesting to say the least. It was also rough and wavy waters and we got a seat on the top deck. The tot was exhausted by then and as soon as he laid across me and my husbands legs, he totally passed out and slept for the hour and 15 min journey to the island! Magic!

When we get to the island, my husband offers to drive, and the driver says yes. We later find out he didnt really even know his way around the island (not that it was too complicated) and we really should have just done the rest of the trip on our own. Lessons learned. Anyway, we didnt realize just how off the beaten path our hotel was. We didnt get our first pick b/c of the last minute reservations; however, I found a super cute place with private huts and a restaurant that looked magical. Its called Finca Mystica and is run by an American couple. Getting there involved driving on a pretty rough dirt road for 20 minutes and then up their driveway which was like off-roading! SO glad for the 4WD Toyota rental! I was laughing by the time we got there b/c it was just comical. The typical way around the island is on rental scooters and we saw numerous couples on scooters WIDE eyed and white knuckled just trying not to crash on this road. Lots of hitch hiker backpacker types and lots of locals walking or biking.

We saw many very poor homes and communities (not just on the island but throughout our travels). I found the arrangement of their communities fascinating though. They typically had one water source which was in the middle of a group of very small block wall homes (some with dirt floors others appeared to have concrete). This area seemed to serve as the communal area that people hung out at and then the houses were only used mainly for sleeping and most likely cooking. Clothing was washed on old school wash boards built into their sinks or on rocks at the edge of the lake. Strangely enough, even our hotel on the island manually washed their laundry. They only had 4-5 huts, but you would expect with all of the towels and sheets they would have a washer. Also, you can forget about a hot shower. We didnt have hot showers until our last two nights there. Neither the beach house or the island had hot water. It didnt bother us much but really made us appreciate the amenity of hot water to shower! I literally saw an ox cart on the island. There were lots of wooden carts pulled by horses that we saw throughout our travels – right next to cars and motorcycles and cyclists.

We had a wonderful waterfall hike, great meals and socialized with some interesting folks while at Finca Mystica. I wish we had stayed a third night. The ferry trip back was much less eventful. We went on to check out Granada (north from San Jorge) which is an older Spanish style town. Very cool with lots of restaurants and night life. I could have spent a whole day taking photos of the architecture. It was beautiful.

Other random sightings: 
*Of course everywhere you see kids riding on the top tubes of bicycles driven by parents or siblings – often going down busy roads
*Bicycles holding onto motorcycles or cars to “hitch a ride”
*We picked up 3 French girls who were hitch hiking on the island back from the waterfall hike to their hotel. Fun to chat with them. They were on a 3 month trip through Central America.
* Impressed by a family from Vermont that were staying at Finca Mystica with their 4 yr old and 6 month old! And also did the waterfall hike!
* I literally saw an ox cart (above). I got a thumbs up from the driver!
* Best of all I saw a mother and child riding a legit horse cart while she showed him something on her smart phone. Old world meets new technology! I wish I had a chance to snap a photo of that!

Overall it was a great trip. An adventure which my husband and I both really enjoy. We were reminded of how much excess we and all Americans have and Im currently looking for more ways to minimize my carbon footprint. We tested the limits of our toddler (and found them) but he also surprised us many times with his patience and new skills and abilities. We were stretched as a family and it brought us closer.
This is why I love to travel.
